Ingredients

  • 16 to 18 lb. turkey
  • salt
  • pepper
  • poultry seasoning
  • Season-All
  • cayenne pepper
  • celery
  • onions
  • bell peppers
  • 6 to 8 jalapeno peppers
  • 1 lb. hot Italian sausage
  • 1 large bottle Italian salad dressing
  • 1 can beer
  • 12 oz. white wine

Instructions

  1. Season the turkey well with salt, pepper, poultry seasoning, Season-All, and cayenne pepper.
  2. Stuff the turkey with celery, onions, bell peppers, jalapeno peppers, and sausage.
  3. Place the turkey in a foil-lined heavy roaster and pour Italian salad dressing, beer, white wine, and vinegar over it.
  4. Cover with foil and cook on the grill with a full bag of charcoal for 4 to 6 hours or in a 400°F oven.
  5. Baste the turkey every 30 to 40 minutes during cooking.
