Ingredients

  • 1 large onion
  • 3/4 cup celery
  • 1/2 cup green pepper
  • 1/8 teaspoon garlic, minced
  • 3/4 stick margarine
  • 24 oz can whole tomatoes
  • 6 oz can tomato paste
  • 1 lb Polish sausage
  • 1 1/2 teaspoon Creole seasoning
  • 2 lb chicken breasts, cut into bite-sized pieces
  • 1 teaspoon hot sauce
  • 2 cups cooked rice

Instructions

  1. Cook in a large saucepan; add onion, celery, green pepper, garlic, and margarine; cook for 15 minutes.
  2. Add whole tomatoes, tomato paste, Polish sausage (cut into bite-sized pieces), and Creole seasoning.
  3. Cook for 45 minutes.
  4. Add bite-sized chicken and hot sauce; cook for 30 minutes.
  5. Add 2 cups cooked rice and simmer all for 5 to 10 minutes.
