Ingredients

  • 1 lb whole hog sausage
  • 1 1/2 cups rice
  • 2 cups chicken broth (for cooking rice)
  • 1/2 cup chopped celery
  • 1 chopped bell pepper
  • 1 chopped onion
  • 1 can cream of mushroom soup
  • 1 can sliced mushrooms
  • 1 can sliced water chestnuts

Instructions

  1. Cook the sausage and drain the excess fat.
  2. Cook the rice in chicken broth until tender.
  3. Simmer chopped celery, bell pepper, and onion in butter until vegetables are softened.
  4. Combine cooked sausage, rice, sautéed vegetables, cream of mushroom soup, sliced mushrooms, sliced water chestnuts, and garlic to taste.
  5. Heat the mixture thoroughly before serving.
