Ingredients

  • 1 cup rice
  • 2 teaspoons instant minced onion
  • 5 ounces frozen green peas
  • 1/2 cup finely diced green pepper
  • 6 slices turkey
  • 10 3/4 ounces cheese soup (1 can)
  • 1 cup milk
  • 1 cup crushed cheese crackers
  • 3 tablespoons melted butter

Instructions

  1. Prepare rice according to directions on the box, adding minced onion to boiling water.
  2. Fluff rice with a fork and spread in a 1 1/2-quart utility dish.
  3. Defrost peas and drain.
  4. Sprinkle peas and green pepper over rice.
  5. Lay slices of turkey over the vegetables.
  6. Mix cheese soup with milk and pour over the turkey.
  7. Combine crushed cheese crackers with melted butter and sprinkle on top of the casserole.
  8. Cover dish with plastic film and microwave for 12 minutes, turning every 3 minutes.
  9. Let stand, covered, for 5 minutes before serving.
