A hearty breakfast casserole combining hash browns, sausage, mushrooms, cheese, and eggs, perfect for overnight prep and satisfying a crowd with savory flavors.

Ingredients

  • 1 bag frozen hash browns
  • 1 onion
  • 1 can mushrooms
  • 1 large bag Cheddar cheese
  • 2 lb. bulk sausage
  • 1½ dozen eggs

Instructions

  1. Cook and drain the sausage.
  2. Butter a 9 x 13-inch cake pan.
  3. Spread frozen hash browns and sautéed onion in the pan.
  4. Place the cooked sausage on top of the hash browns.
  5. Add canned mushrooms over the sausage.
  6. Beat the eggs and pour them over the layered ingredients.
  7. Spread cheddar cheese on top of the eggs.
  8. Let the casserole set overnight.
  9. Bake at 350°F (175°C) for 1 hour before serving.
