A hearty bean soup with mixed beans, split peas, and barley, enhanced with beef broth and tomato soup, perfect for a comforting, protein-rich meal suited for all.

Ingredients

  • 1/4 cup white beans
  • 1/4 cup kidney beans
  • 1/4 cup split peas
  • 1/4 cup pinto beans
  • 2 tablespoons barley
  • 2 tablespoons parsley
  • 2 tablespoons dried onions
  • 1 bay leaf
  • 2 tablespoons powdered beef broth

Instructions

  1. Wash all the beans and soak them overnight.
  2. Drain the soaked beans and add them to a pot with 6 cups of water.
  3. Simmer the beans until they are tender.
  4. Add one can of tomato soup to the pot.
  5. Incorporate 1 pound of cooked ground beef into the soup.
  6. Continue simmering for a few more minutes.
  7. Add salt only in the last 5 minutes of cooking to prevent toughening the beans.
