Ingredients

  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 to 2 1/2 pounds round or chuck beef
  • 3 tablespoons oil
  • 1 can beef broth
  • 1/2 cup water
  • 1/2 cup bottled barbecue sauce
  • 1 teaspoon chili powder
  • 1 green pepper
  • 1/2 cup sliced stuffed olives

Instructions

  1. Mix flour, salt, and pepper.
  2. Rub or pound the mixture into both sides of the meat.
  3. Heat oil in a heavy skillet.
  4. Brown the meat on both sides.
  5. Blend beef broth, water, barbecue sauce, and chili powder; pour over the meat.
  6. Cover and simmer for 1 hour.
  7. Add green pepper and olives, then simmer for an additional 1 to 1 1/2 hours.
  8. Skim off excess fat.
  9. Thicken the gravy.
