A hearty casserole combining seasoned ground beef, sweet corn, and melted cheddar, layered with cornbread for a comforting, flavorful dish perfect for family dinners or gatherings.

Ingredients

  • 2 lb ground beef
  • 3 boxes Jiffy cornbread mix
  • 2 cans creamed corn
  • 1 package shredded Cheddar cheese
  • 4 to 6 green onions
  • sliced jalapenos

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown the ground beef in a skillet until fully cooked; drain excess fat.
  3. Grease a large casserole dish.
  4. Spread half of the Jiffy cornbread mix evenly in the bottom of the dish.
  5. Layer creamed corn over the cornbread mix.
  6. Add the cooked ground beef on top of the creamed corn.
  7. Sprinkle chopped green onions, sliced jalapenos, and shredded Cheddar cheese over the beef.
  8. Cover with the remaining cornbread mix.
  9. Bake in the preheated oven for 35 to 45 minutes, until golden brown.
