Ingredients

  • 1 large jar Great Northern beans
  • 2 small cans Great Northern beans
  • 2 lbs chicken breasts
  • 6 cups chicken broth
  • 2 onions
  • 4 garlic cloves
  • 2 teaspoons cumin
  • 1.5 teaspoons oregano
  • 0.25 teaspoons cayenne pepper

Instructions

  1. Cook the chicken until done; bake it first for 1 1/2 hours with a little water until tender. Cool and then cut into small pieces or shred.
  2. Saute the chopped onions and minced garlic.
  3. Add the cooked chicken and spices (cumin, oregano, cayenne pepper) and simmer a few minutes.
  4. Add the undrained beans and chicken broth to the mixture.
  5. Simmer the chili for 2 hours.
  6. Add the cheddar cheese and stir until melted.
