- Cook the chicken until done; bake it first for 1 1/2 hours with a little water until tender. Cool and then cut into small pieces or shred.
- Saute the chopped onions and minced garlic.
- Add the cooked chicken and spices (cumin, oregano, cayenne pepper) and simmer a few minutes.
- Add the undrained beans and chicken broth to the mixture.
- Simmer the chili for 2 hours.
- Add the cheddar cheese and stir until melted.
