Ingredients

  • 2 3/4 cups plain flour
  • 2 3/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 3 tablespoons instant coffee
  • 2 1/2 cups light brown sugar
  • 2 beaten eggs
  • 1 teaspoon vanilla
  • 2 1/2 sticks regular margarine melted
  • 12 oz. chocolate drops
  • about 3 oz. chopped pecans

Instructions

  1. Sift the plain flour, baking powder, salt, and instant coffee together in a bowl.
  2. In a separate bowl, mix the light brown sugar, beaten eggs, vanilla, and melted margarine until well blended.
  3. Add the dry ingredients to the wet mixture and blend well by hand with a spoon.
  4. Stir in the chocolate drops and chopped pecans.
  5. Spread the batter evenly in a 13 x 11 x 1.5-inch pan.
  6. Bake at 350°F (175°C) for 30 to 35 minutes until the cookies look flaky.
  7. Cool the cookies for about 20 minutes.
  8. Cut into squares and serve.
