  • 8 oz. Mozzarella, diced

Instructions

  1. Cook shells in plenty of boiling, salted water for 12 to 15 minutes; drain.
  2. Combine Ricotta, Mozzarella and beaten eggs; blend with salt, pepper and parsley.
  3. Fill each shell with the cheese mixture.
  4. Spread a thin layer of sauce in a rectangular baking dish.
  5. Place stuffed shells in the dish, one layer deep; top with remaining sauce.
  6. Sprinkle with grated Parmesan cheese; cover with a sheet of aluminum foil.
  7. Bake at 350°F for about 25 to 30 minutes.
