A moist, flavorful date tea loaf with crunchy nuts and a hint of orange, perfect for teatime or as a sweet treat for gatherings.

Ingredients

  • 2 cups chopped dates
  • 1 cup boiling water
  • 1 1/2 cups Crisco solid shortening
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/3 cup cool water
  • 1 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pour boiling water over chopped dates and let cool.
  3. Cream shortening and brown sugar until light and fluffy; beat in the egg.
  4. Add baking soda to the cooled date mixture and stir.
  5. Add flour, salt, and cool water to the creamed mixture and beat until smooth.
  6. Stir in the cooled date mixture and continue beating until well combined.
  7. Fold in chopped walnuts or pecans.
  8. Pour the batter into a greased loaf pan.
  9. Bake for 70 minutes or until a toothpick inserted in the center comes out clean.
  10. Loosen the sides of the loaf and cool slightly on a wire rack.
  11. Wrap the loaf securely in foil.
  12. Serve with whipped cream cheese flavored with a small amount of orange juice and a dash of orange flavoring.
