  1. Put spareribs in a large Dutch oven or soup pot.
  2. Cover with water; add bay leaves and garlic.
  3. Bring to a boil and simmer for 1 hour.
  4. Wash sauerkraut well.
  5. Drain most of the water off the ribs and add sauerkraut with remaining water to the pot.
  6. Add chopped onion and dried mushrooms.
  7. Let simmer all day for at least 3 to 4 hours.
  8. Add chopped bacon, flour, and potatoes, then let simmer for about 1 hour longer.
  9. Optionally, add sliced Polish sausage at this time.
