Ingredients

  • 1 tsp sugar
  • 1 1/2 cups cornmeal
  • 3 tbsp flour
  • 1 1/2 cups milk
  • 2 tbsp shortening or bacon drippings
  • 1 tsp salt
  • 3 tsp baking powder
  • 1 egg

Instructions

  1. In a bowl, mix all dry ingredients: cornmeal, flour, sugar, salt, and baking powder.
  2. Add milk and egg to the dry ingredients and stir until combined.
  3. Melt the shortening or bacon drippings in a skillet or baking pan.
  4. Pour the batter into the well-greased hot skillet or pan.
  5. Bake at 450°F (232°C) for about 20 to 25 minutes, until golden and cooked through.
