Ingredients

  • 1 soup bone with meat attached
  • 1 Tbsp. shortening
  • 2 c. water
  • 1 onion, quartered
  • several celery leaves
  • 1/2 c. shredded cabbage
  • 1 pt. canned tomatoes
  • 1 pt. canned carrots
  • 2 to 3 diced potatoes
  • 1 can green beans
  • 1/4 c. barley

Instructions

  1. Brown all sides of the soup bone with meat in shortening.
  2. Add water, quartered onion, and celery leaves; simmer over low heat for about an hour or until the meat falls from the bone.
  3. Add shredded cabbage, canned tomatoes, canned carrots, diced potatoes, green beans, and barley.
  4. Simmer until potatoes are tender and flavors are well combined.
