Kosher Stuffed Manicotti

Ingredients

  • 10-12 manicotti shells
  • 10-ounce package frozen chopped spinach, cooked
  • 1/4 cup grated mild Cheddar
  • 1 egg, beaten
  • pepper
  • 1-1/2 cups cottage cheese
  • 2 tablespoons matzah meal
  • 1/2 teaspoon salt
  • 2 10-1/2-ounce cans meatless spaghetti sauce

Instructions

  1. Cook manicotti in 2 quarts boiling, salted water for 10 minutes until almost tender, or according to package. Drain and rinse in cold water, handling carefully. Combine cottage cheese, matzah, egg, salt, spinach, and pepper. Stuff manicotti with this filling. Arrange in lightly greased baking dish. Top with spaghetti sauce and Cheddar. Bake at 375' for 25-30 minutes, or until bubbly and browned.
