Instructions

  1. If you use dried mushrooms, soak them in warm water for 30 minutes, then squeeze to drain well.
  2. Chop mushrooms, discarding stems.
  3. Cut chicken into bite-sized pieces.
  4. Blend 1 tablespoon cold water into cornstarch; stir in soy sauce and set aside.
  5. Preheat a wok or large skillet over high heat; add cooking oil.
  6. Stir-fry garlic in hot oil for 30 seconds.
  7. Add green pepper, bamboo shoots, peanuts, crushed red pepper, mushrooms, and pea pods.
  8. Stir-fry for 2 minutes.
  9. Remove vegetables and ingredients from wok; set aside.
  10. Add chicken to the wok; stir-fry for 2 minutes or until cooked through.
  11. Stir the soy mixture and add it to the chicken; cook and stir until thickened and bubbly.
  12. Return vegetables and ingredients to the wok; cover and cook for 1 minute.
  13. Serve immediately over white or brown rice.
