  • 4 carrots, pared and diced

  • 1 c. potato cubes

  • 1/2 c. orzo

  2. Bring to a boil and then simmer for 1 hour.
  3. Add chopped onion, barley, diced carrots, green beans, diced summer squash, potato cubes, and cayenne pepper.
  4. Continue to simmer until the vegetables are just tender, about 30 minutes.
  5. Add orzo and cook for another 10 to 12 minutes.
