Lamb Burger

Ingredients

  • 2 lb. lean ground lamb
  • 1/2 c. minced green pepper
  • 1/4 c. soy sauce
  • 2 tsp. grated lemon rind
  • 1/2 tsp. ground ginger
  • 6 unsweetened pineapple slices
  • 6 Tbsp. plain low-fat yogurt

Instructions

  1. Gently mix
  2. together
  3. lamb,
  4. green
  5. pepper,
  6. soy sauce, lemon rind and
  7. ginger.
  8. Shape
  9. into 12 patty, slightly larger than the pineapple
  10. slices. Top
  11. 6 of
  12. the
  13. patties
  14. with a pineapple slice.
  15. Spoon
  16. 1 tablespoon of yogurt into center of each. Top the
  17. pineapple
  18. with another lamb patty.
  19. Pinch the edges together all around to form a large burger. Grill about 4-inches above heat for
  20. 6 to 8 minutes per side or to desired doneness.
