Ingredients

  • 16 oz. candied cherries, chopped
  • 16 oz. candied pineapple, chopped
  • 1 box raisins or chopped dates
  • 2 qt. chopped pecans
  • 1 c. flour
  • 1/2 lb. unsweetened chocolate, melted
  • 2 c. dark syrup
  • 2 c. sugar
  • 8 eggs, beaten
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1/2 tsp. ground cloves
  • 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 1/4 tsp. salt

Instructions

  1. Mix candied cherries, candied pineapple, raisins or chopped dates, and chopped pecans with 1 cup of flour; set aside.
  2. Mix melted unsweetened chocolate, dark syrup, and sugar.
  3. Add beaten eggs to the mixture.
  4. Add cinnamon, allspice, ground cloves, nutmeg, baking soda, and salt.
  5. Add enough flour to make the mixture not runny; then fold in the fruits and nuts.
  6. The dough will now be thick.
  7. Spread the dough to 1/2-inch thickness in greased and floured pans; pat down with a hand dipped in water.
  8. Bake at 350°F for 25 minutes.
  9. Remove from pans; serve while still hot.
  10. Edges will be hard but will soften when stored tightly covered.
