Lazy-Day Vegetable Lasagna
A hearty, cheesy vegetable lasagna featuring mushrooms, spinach, and tofu, perfect for a comforting, meatless meal that appeals to vegetarians and busy cooks alike.

- Preheat oven to 350°F (175°C).
- Cook the sliced mushrooms and green onions in hot olive oil in a large skillet until lightly browned.
- Stir in the spaghetti sauce.
- In a mixer bowl, beat the silken tofu and egg until well blended.
- Stir in the thawed and drained spinach, garlic powder, salt, and pepper into the tofu mixture.
- Spray a 9 x 13-inch baking dish with cooking spray.
- Layer half of the spaghetti sauce mixture, half of the lasagna noodles, all of the tofu mixture, remaining noodles, and remaining sauce in the prepared dish.
- Cover and bake for 45 minutes.
- Sprinkle with shredded mozzarella cheese.
- Bake uncovered for an additional 15 minutes.
- Let stand for 10 minutes before serving.
