Ingredients

  • 1 cup sliced mushrooms
  • 1 tablespoon olive oil
  • 1 (48 oz.) jar spaghetti sauce
  • 1/2 (10 oz.) package silken tofu
  • 1 egg
  • 1 (10 oz.) package frozen chopped spinach, thawed and drained
  • 1/2 cup sliced green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the sliced mushrooms and green onions in hot olive oil in a large skillet until lightly browned.
  3. Stir in the spaghetti sauce.
  4. In a mixer bowl, beat the silken tofu and egg until well blended.
  5. Stir in the thawed and drained spinach, garlic powder, salt, and pepper into the tofu mixture.
  6. Spray a 9 x 13-inch baking dish with cooking spray.
  7. Layer half of the spaghetti sauce mixture, half of the lasagna noodles, all of the tofu mixture, remaining noodles, and remaining sauce in the prepared dish.
  8. Cover and bake for 45 minutes.
  9. Sprinkle with shredded mozzarella cheese.
  10. Bake uncovered for an additional 15 minutes.
  11. Let stand for 10 minutes before serving.
