Lean Beef 'N' Vegetables
A hearty, low-fat beef and vegetable stir-fry with savory sage and melted Swiss cheese, perfect for a quick, nutritious meal for any beef and veggie lover.
Ingredients
- 8 oz. lean ground beef
- 2 Tbsp. olive oil ⓘ
- 4 c. shredded green cabbage ⓘ
- 1 large onion, diced ⓘ
- 1 c. sliced fresh mushrooms ⓘ
- 1 medium red bell pepper, cored, seeded and cut into thin strips ⓘ
- 1/2 tsp. dried sage leaves ⓘ
- 1/2 tsp. freshly ground black pepper ⓘ
- 1/2 c. coarsely grated low-fat Swiss cheese ⓘ
- salt to taste ⓘ
Instructions
- In a 12-inch skillet, cook ground beef until well-browned. Using a slotted spoon, remove beef to a bowl and set aside.
- Add oil to the drippings in the skillet.
- Heat over medium heat.
- Add cabbage and onion.
- Cook for 5 minutes, stirring occasionally, until vegetables are softened.
- Add mushrooms, red bell peppers, sage, and black pepper.
- Cook for 5 minutes longer, stirring occasionally.
- Remove from heat.
- Stir in Swiss cheese, reserved beef, and salt.
