Ingredients

  • 1 Tbsp. butter
  • 2 eggs
  • 1 c. half and half
  • 1 c. plain yogurt
  • 1/3 c. crumbled Feta cheese
  • 1/2 c. grated Swiss cheese
  • 1/3 c. chopped parsley
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 (8 oz.) pkg. fresh angel hair pasta
  • 1 jar thick and chunky salsa
  • 1 lb. medium shrimp, peeled and divided

Instructions

  1. Preheat oven to 350°F.
  2. Butter the sides and bottom of an 8 x 12-inch baking dish.
  3. In a bowl, mix eggs, half and half, yogurt, Feta cheese, Swiss cheese, parsley, basil, and oregano.
  4. Spread half of the angel hair pasta on the bottom of the baking dish.
  5. Cover the pasta with salsa.
  6. Add half of the shrimp on top of the salsa.
  7. Add the remaining pasta to the baking dish.
  8. Pour and spread the egg mixture over the pasta.
  9. Add the remaining shrimp and top with Monterey Jack cheese.
  10. Bake at 350°F for 25 minutes until bubbling.
  11. Cover with foil during baking.
  12. Remove from oven and let stand for 10 minutes before serving.
