Ingredients

  • 1 3/4 cups sugar
  • 1 cup margarine, softened
  • 2 large eggs
  • 2/3 cup oil
  • 3 cups all-purpose flour
  • 4 1/2 ounces almonds, finely ground
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 teaspoons pure lemon extract

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a large bowl, cream together the sugar and margarine.
  3. Add the eggs and oil, and beat until well blended.
  4. In a medium bowl, combine flour, ground almonds, baking soda, and salt.
  5. Stir to mix.
  6. Add the flour/almond mixture and lemon extract to the creamed mixture, and beat well.
  7. Drop dough from teaspoon onto ungreased cookie sheets, spacing cookies about 2 inches apart.
  8. Using the bottom of a dipped-in-sugar glass, flatten each dough portion.
  9. Bake for 10 to 12 minutes.
  10. Remove from cookie sheets immediately and cool on racks.
