- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl, cream together the sugar and margarine.
- Add the eggs and oil, and beat until well blended.
- In a medium bowl, combine flour, ground almonds, baking soda, and salt.
- Stir to mix.
- Add the flour/almond mixture and lemon extract to the creamed mixture, and beat well.
- Drop dough from teaspoon onto ungreased cookie sheets, spacing cookies about 2 inches apart.
- Using the bottom of a dipped-in-sugar glass, flatten each dough portion.
- Bake for 10 to 12 minutes.
- Remove from cookie sheets immediately and cool on racks.
