Lemon Chicken Ii

Ingredients

  • 2 large chicken breasts, boned and skinned
  • 1 c. bread crumbs
  • 1/2 tsp. minced garlic
  • 1 1/2 to 2 Tbsp. fresh parsley, chopped (if desperate, use dried)
  • 1/4 c. flour
  • 1 egg, slightly beaten
  • 2 Tbsp. water
  • 2 Tbsp. butter
  • 1/4 c. oil
  • 1 1/2 Tbsp. lemon juice

Instructions

  1. In one dish, place 1/4 cup flour.
  2. In another dish, mix egg with 2 tablespoons water.
  3. In third dish or on wax paper, combine bread crumbs, garlic and parsley.
  4. Dip chicken pieces in flour, then in the egg mixture, then in crumbs.
  5. Chill about 1 hour. Place butter, oil and lemon juice in frying pan.
  6. Add chicken; saute for about 7 minutes on each side at low heat.
  7. Serve at once.
  8. Easy but so good.
  9. Chicken can be breaded earlier and refrigerated.
  10. Especially good served with a crisp tossed salad and Fettucini Alfredo.
