Ingredients

  • 1/3 cup melted butter or vegetable oil
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 1/4 teaspoon almond extract
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup chopped pecans
  • Grated rind of 1 lemon

Instructions

  1. Heat oven to 325°F.
  2. Grease an ovenproof glass baking dish approximately 6 x 10 inches.
  3. Blend well the melted butter and 1 cup of sugar.
  4. Beat in eggs, one at a time.
  5. Add almond extract.
  6. Sift together flour, baking powder, and salt.
  7. Add to the egg mixture alternately with milk, blending after each addition.
  8. Fold in lemon rind and chopped pecans.
  9. Pour batter into the prepared baking dish.
  10. Bake for 1 hour and 10 minutes.
