- Beat the egg whites until stiff.
- Cream together the butter, lemon rind, and sugar.
- Add and mix well the egg yolks, flour, Grape-Nuts, lemon juice, and milk.
- Gently fold in the beaten egg whites.
- Pour the mixture into a 5-cup souffle dish.
- Set the dish in a pan of hot water.
- Bake in a 325°F (163°C) oven for 1 hour to 1 hour and 15 minutes.
