Ingredients

  • 1/4 cup butter
  • 2 teaspoons grated lemon rind
  • 1 cup sugar
  • 2 egg yolks
  • 2 tablespoons flour
  • 1/4 cup Grape-Nuts
  • 2 tablespoons lemon juice
  • 1 cup milk
  • 2 egg whites

Instructions

  1. Beat the egg whites until stiff.
  2. Cream together the butter, lemon rind, and sugar.
  3. Add and mix well the egg yolks, flour, Grape-Nuts, lemon juice, and milk.
  4. Gently fold in the beaten egg whites.
  5. Pour the mixture into a 5-cup souffle dish.
  6. Set the dish in a pan of hot water.
  7. Bake in a 325°F (163°C) oven for 1 hour to 1 hour and 15 minutes.
  8. Serve warm.
