Ingredients

  • 1 cup chopped pecans
  • 1 cup flour
  • 1 stick oleo
  • 1 (8 oz.) Cool Whip
  • 1 (8 oz.) cream cheese
  • 1 cup confectioners sugar
  • 2 (3 oz. each) package lemon instant pudding

Instructions

  1. Mix chopped pecans, flour, and oleo together until crumbly.
  2. Press mixture into a 9 x 13 inch pan to form the crust.
  3. Bake for 20 minutes, then allow to cool.
  4. In a bowl, beat cream cheese and confectioners sugar until smooth.
  5. Fold in 1 cup of Cool Whip into the cream cheese mixture.
  6. Spread the cream cheese mixture over the cooled crust.
  7. In a separate bowl, combine milk and lemon pudding mixes until thickened.
  8. Spread the pudding mixture over the cream cheese layer.
  9. Spread the remaining Cool Whip over the pudding layer.
  10. Sprinkle with finely chopped nuts on top.
  11. Refrigerate the cake until chilled before serving.
