Ingredients

  • 1 cup butter or margarine, softened
  • 2 cups firmly packed brown sugar
  • 2 eggs
  • 2 teaspoons grated lemon peel
  • 3 tablespoons lemon juice
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups quick cooking rolled oats
  • 1 1/2 cups chopped dates

Instructions

  1. Cream margarine and brown sugar together until smooth.
  2. Beat in eggs, grated lemon peel, and lemon juice.
  3. In a separate bowl, stir together the all-purpose flour, salt, and soda.
  4. Stir the dry ingredients into the margarine mixture.
  5. Then stir in the rolled oats, chopped dates, until well combined.
  6. Drop by rounded tablespoonfuls onto ungreased cookie sheets, about 2 inches apart.
  7. Bake in a 350°F oven for about 18 minutes or until dry in the center and edges are well browned.
