Ingredients

  • 2 c. flour
  • 1 c. quick oats (uncooked)
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 c. butter or oleo, softened
  • 1 c. firmly packed brown sugar
  • 1 c. granulated sugar
  • 1 egg, slightly beaten
  • 1 tsp. vanilla extract
  • 1 c. solid pack pumpkin
  • 1 c. semi-sweet chocolate morsels

Instructions

  1. Preheat oven to 350°F.
  2. Combine flour, oats, baking soda, cinnamon, and salt in a bowl.
  3. Cream the softened butter until smooth.
  4. Add brown sugar and granulated sugar; beat until fluffy.
  5. Mix in the egg and vanilla extract until well combined.
  6. Alternate adding the dry mixture and pumpkin to the creamed mixture, mixing well after each addition.
  7. Stir in the semi-sweet chocolate morsels.
  8. Drop spoonfuls of dough onto a lightly greased cookie sheet.
  9. Bake for 15 minutes or until golden brown.
