- Grind green tomatoes, onions, hot peppers, sweet peppers, cabbage, and cucumbers in a food chopper.
- Add salt and sugar to taste, about 1/4 cup each, and let drain well.
- Squeeze out as much liquid as possible with hands.
- Bring apple cider vinegar, 7 1/2 cups sugar, and pickling spice to a boil.
- Add the vegetable mixture and simmer for 30 minutes.
- Pour into hot jars and seal.
