Lib'S Chow Chow is a tangy, spicy relish made from green tomatoes, onions, peppers, and cabbage, perfect for adding zest to sandwiches, meats, and side dishes.

Ingredients

  • 1 gal. small green tomatoes
  • 14 large onions
  • 6 hot peppers
  • 12 sweet peppers
  • 2 medium cabbage
  • 6 cucumbers
  • 9 cups apple cider vinegar
  • 7 1/2 cups sugar
  • 1/2 box pickling spice, tied in bag

Instructions

  1. Grind green tomatoes, onions, hot peppers, sweet peppers, cabbage, and cucumbers in a food chopper.
  2. Add salt and sugar to taste, about 1/4 cup each, and let drain well.
  3. Squeeze out as much liquid as possible with hands.
  4. Bring apple cider vinegar, 7 1/2 cups sugar, and pickling spice to a boil.
  5. Add the vegetable mixture and simmer for 30 minutes.
  6. Pour into hot jars and seal.
