Ingredients

  • 16 oz. part skim ricotta cheese
  • 8 oz. plain low-fat yogurt, drained
  • 1 cup sugar
  • 2 1/2 Tbsp. all-purpose flour
  • 1 Tbsp. lemon rind
  • 2 Tbsp. lemon juice
  • 8 oz. light processed cream cheese product, softened
  • 2 eggs
  • 2 egg whites
  • 2 1/2 tsp. vanilla extract
  • graham cracker crust

Instructions

  1. Combine the ricotta cheese, drained yogurt, sugar, flour, lemon rind, and lemon juice in the container of an electric blender; process until smooth and set aside.
  2. In a separate bowl, beat the light processed cream cheese at medium speed until smooth.
  3. Add the eggs, egg whites, and vanilla extract; beat until smooth.
  4. Gradually add the blended mixture to the cream cheese mixture; beat until smooth.
  5. Pour into graham cracker crust and refrigerate until set.
