Ingredients

  • 1 Tbsp. plus 1 tsp. margarine
  • 10 oz. thinly sliced chicken
  • 1 c. sliced mushrooms
  • 1 clove garlic, minced
  • 1/2 c. dry Marsala wine
  • 1/4 c. canned chicken broth
  • 1 tsp. all-purpose flour
  • 1/4 tsp. salt
  • dash of freshly ground pepper

Instructions

  1. In a 9-inch nonstick skillet, heat 1 tablespoon plus 1 teaspoon margarine until bubbly and hot.
  2. Add the thinly sliced chicken and quickly sauté on both sides until cooked through. Remove chicken from pan and set aside.
  3. In the same skillet, combine sliced mushrooms and minced garlic; cook over high heat, stirring constantly, until the liquid evaporates.
  4. Add dry Marsala wine and cook, stirring occasionally, for 3 to 4 minutes.
  5. In a small bowl, combine canned chicken broth and all-purpose flour, stirring to dissolve the flour.
  6. Add the broth mixture to the skillet and cook, stirring constantly, until the sauce thickens.
  7. Return the cooked chicken and any juices to the skillet, add salt and freshly ground pepper, and cook until heated through.
  8. Serve immediately.
