Ingredients

  • 2/3 cup freshly squeezed orange juice
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 large eggs
  • 2 teaspoons finely grated orange zest
  • 1 2/3 cups unbleached flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray the bottom and sides of an 8-inch spring-form pan with nonstick coating.
  3. Lightly flour the pan.
  4. In a mixing bowl, combine orange juice, honey, and olive oil or butter.
  5. Separate the eggs, adding the yolks to the wet mixture and beating well.
  6. Stir in orange zest.
  7. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  8. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  9. Beat egg whites until stiff peaks form.
  10. Gently fold the egg whites into the batter until incorporated.
  11. Pour the batter into the prepared pan.
  12. Bake in the preheated oven for about 35 minutes, or until a toothpick inserted into the center comes out clean.
  13. Allow the cake to cool in the pan for 10 minutes, then remove the sides of the spring-form pan.
  14. Dust with powdered sugar before serving.
