Ingredients

  • chicken breasts
  • clove garlic
  • egg beaters
  • margarine
  • chicken broth
  • parsley
  • lemon
  • bread crumbs

Instructions

  1. Mix bread crumbs and parsley in a shallow dish.
  2. Dip chicken pieces into Egg Beaters, then coat with the breadcrumb mixture.
  3. In a skillet over medium-high heat, cook the garlic in margarine for 1 minute.
  4. Add the coated chicken to the skillet and brown on both sides.
  5. Cut half the lemon into thin slices and arrange over the chicken.
  6. Squeeze juice from the remaining lemon half into the chicken broth.
  7. Pour the chicken broth into the skillet with the chicken and lemon slices.
  8. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes or until the chicken is tender.
