Ingredients

  • 1 package dates
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1 scant cup sugar
  • 1/3 cup butter
  • 1/2 cup grated nuts
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 3/4 cups flour
  • 1 egg

Instructions

  1. In a large mixing bowl, chop the dates.
  2. Add baking soda and boiling water to the dates; let sit for a few minutes.
  3. In a separate large bowl, cream together the butter and sugar.
  4. Add vanilla and egg to the creamed mixture; beat until smooth.
  5. Stir in the date mixture.
  6. Combine well; fold in the grated nuts.
  7. Pour the batter into a greased 9 x 5-inch loaf pan.
  8. Bake at 375°F (190°C) for 1 hour or until a cake tester inserted in the center comes out clean.
