Lincoln's Special is a flavorful, cheesy Mexican casserole with seasoned ground beef, enchilada sauce, and melted cheese, perfect for family dinners and gatherings.

Ingredients

  • 10 to 14 tortillas
  • 1 1/2 to 1 3/4 lb. ground beef
  • 1 chopped onion
  • 2 small cans Old El Paso diced chili peppers
  • pepper and salt
  • small amount oregano
  • 2 c. shredded Cheddar cheese
  • 1 (16 oz.) can refried beans
  • salsa
  • 2 (10 oz.) cans enchilada sauce

Instructions

  1. Brown ground beef with chopped onion and diced chili peppers.
  2. Season with salt and pepper to taste.
  3. Sprinkle with a small amount of oregano.
  4. Place some of the ground beef mixture into each tortilla.
  5. Add 2 tablespoons of refried beans to each tortilla.
  6. Sprinkle shredded Cheddar cheese over the beef and beans in each tortilla.
  7. Roll up the tortillas and place them in a 9 x 13-inch pan.
  8. Pour salsa over the rolled tortillas to taste.
  9. Pour enchilada sauce all over the assembled dish.
