Ingredients

  • 4 chicken breast halves
  • 1/2 teaspoon salt
  • 1 medium carrot
  • 1 small onion
  • 5 mushrooms
  • 4 cups water
  • 1/2 cup June peas
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1/4 teaspoon salt

Instructions

  1. Cook chicken in 4 cups water and 1/2 teaspoon salt until tender, bring to a boil and simmer for 45 minutes.
  2. Drain 2 cups of broth from the cooked chicken.
  3. Chop the chicken into small pieces.
  4. Cook the carrot and onion in the broth; add mushrooms and peas.
  5. Dissolve cornstarch in 2 tablespoons water and add to the vegetables, stirring constantly.
  6. Cook over medium heat until the mixture is bubbly.
  7. Add the chopped chicken, 1/4 teaspoon salt, and pepper to the vegetable mixture.
