A creamy, cheesy squash casserole with tender yellow squash, rich cheeses, and a crunchy cracker topping, perfect for family dinners and holiday gatherings.

Ingredients

  • 8 yellow squash, sliced
  • 1/2 medium onion, chopped
  • 1 stick margarine
  • 1 cup grated Cheddar cheese
  • 1 cup grated Velveeta cheese
  • 1 can cream of mushroom soup

Instructions

  1. Boil the sliced yellow squash and chopped onion in a small amount of water until tender.
  2. Drain well and add the margarine, grated Cheddar cheese, grated Velveeta cheese, and the can of cream of mushroom soup; mix well.
  3. Pour the mixture into a greased casserole dish.
  4. Mix the crackers with melted margarine and pour on top of the squash mixture.
  5. Bake at 350 degrees for 25 to 30 minutes until bubbly and golden.
