A savory cauliflower ring with creamy mayonnaise and herbs, baked to perfection, ideal as a side dish or elegant appetizer for entertaining guests.

Ingredients

  • 3 Tbsp. margarine
  • 3 Tbsp. flour
  • 1/2 c. milk
  • 1/2 c. mayonnaise
  • 2 c. finely chopped cooked cauliflower
  • 1/4 c. chopped parsley
  • 1 Tbsp. minced onion
  • 3 eggs, slightly beaten
  • 1 Tbsp. lemon juice
  • 1 tsp. Worcestershire sauce
  • 1/4 tsp. Accent
  • salt and pepper, to taste

Instructions

  1. Cook margarine, flour, and milk until thick; add mayonnaise.
  2. Combine with remaining ingredients.
  3. Turn into a well-greased 1-quart ring mold or casserole.
  4. Set in a shallow pan of hot water.
  5. Bake at 375°F for 45 minutes or until firm.
  6. Unmold on a heated platter and fill the center of the mold with English peas or green beans.
