Ingredients

  • 6 medium potatoes, cooked, peeled and cubed
  • 8 green onions, sliced including tops
  • 2 medium onions, chopped
  • 1.5 quarts chicken broth
  • 6 oz. cream cheese, cubed and softened
  • 4 drops Tabasco sauce
  • salt to taste
  • 1.5 lb. Polish or smoked sausage, cooked and sliced

Instructions

  1. In a large pot, combine cooked, peeled, and cubed potatoes, sliced green onions, chopped onions, and chicken broth.
  2. Bring to a boil over medium-high heat.
  3. Reduce heat and simmer for 45 minutes.
  4. Transfer the potato mixture into a blender and add softened cream cheese; blend until smooth.
  5. Stir in Tabasco sauce and salt to taste.
  6. Return the mixture to the pot and reheat over low heat.
  7. Add cooked, sliced sausage and stir until the soup is hot throughout.
  8. Serve hot, sprinkled with paprika on top.
