Ingredients

  • 2 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 2 1/2 cups tomato juice
  • 1 teaspoon sugar
  • 2 tablespoons vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1 tablespoon grated onion
  • 3/4 cup peeled, diced cucumber
  • 1/2 cup celery
  • 1/3 cup diced green pepper

Instructions

  1. Soften gelatin in cold water.
  2. Heat 1 cup of tomato juice; add gelatin and stir until dissolved.
  3. Add remaining tomato juice, sugar, vinegar, lemon juice, salt, and Worcestershire sauce.
  4. Chill until partially set.
  5. Fold in onion, cucumber, celery, and green pepper.
  6. Turn the mixture into an oiled 1 1/2-quart ring mold.
  7. Chill until the gelatin is fully set.
  8. When ready to serve, place the mold on a bed of lettuce or greens.
  9. Line the center of the salad ring and fill with crab salad, tuna salad, or chicken salad.
  10. Garnish with cucumber slices.
