Ingredients

  • 2 cups semi-sweet chocolate chips, divided
  • 1 cup sugar
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons margarine
  • 3 egg whites, beaten
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon chocolate extract
  • confectioners sugar for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray a 13 x 9-inch baking pan with nonstick cooking spray and set aside.
  3. In a large, heavy saucepan, cook 1 cup of chocolate chips, sugar, applesauce, and margarine over low heat, stirring constantly until smooth.
  4. Remove from heat and let cool slightly.
  5. Beat in the beaten egg whites.
  6. Add the remaining ingredients and 1 cup of chocolate chips, and beat until well combined.
  7. Spread the batter evenly in the prepared pan.
  8. Bake for 20 to 25 minutes until set.
  9. Allow to cool in the pan on a wire rack, then garnish with confectioners sugar.
