Ingredients

  • 1 lb. pork liver
  • 1/2 cup onion, chopped
  • 1/2 cup chopped celery
  • 1 cup tomato juice
  • 1/2 teaspoon pepper
  • 1/4 cup fat
  • 1/2 cup chopped green pepper
  • 2 cups cooked rice
  • 1 teaspoon salt

Instructions

  1. Cover the pork liver in boiling water and simmer for 10 to 12 minutes.
  2. Drain the liver and cut into small cubes.
  3. Brown the liver, chopped onion, chopped green pepper, and chopped celery in hot fat.
  4. Mix the cooked rice and tomato juice with the browned liver and vegetables.
  5. Add salt and pepper to taste.
  6. Bake the mixture at 350°F for 1 1/2 hours.
