Ingredients

  • 1 cup lobster meat
  • 2 tablespoons sherry wine
  • 2 tablespoons sherry wine (additional for zing)
  • 1/2 cup mushrooms, chopped
  • 1/4 cup green pepper, diced
  • 1/4 cup fresh bread crumbs
  • 1/4 cup Parmesan cheese
  • 1 teaspoon paprika

Instructions

  1. Mix sherry wine, chopped mushrooms, and diced green pepper in a saucepan and cook over medium heat, stirring constantly for 15 minutes.
  2. Remove from heat and stir in paprika and sliced pimiento.
  3. Add salt and pepper to taste. Transfer the mixture to a baking dish.
  4. Top with a mixture of bread crumbs and Parmesan cheese.
  5. Bake in a moderately hot oven for 15 minutes until golden and bubbly.
