Ingredients

  • 1 (9-inch) baked pie crust
  • 1 1/2 cups cooked and drained lobster pieces
  • 1/3 cup chopped green pepper
  • 1 cup shredded Swiss or Cheddar cheese
  • 3 eggs
  • 1/4 teaspoon salt
  • 3/4 cup light cream or evaporated milk
  • 1/8 teaspoon paprika

Instructions

  1. Lightly mix cooked and drained lobster pieces, chopped green pepper, shredded cheese, slightly beaten eggs, light cream, and salt in a medium bowl.
  2. Pour the mixture into a 9-inch baked pie crust.
  3. Sprinkle with paprika on top.
  4. Cook on microwave level 4 for 25 to 30 minutes or until a knife inserted in the center comes out clean.
  5. Turn the pie 1/4 turn halfway through cooking time.
