Long Noodle Soup

Ingredients

  • 1 tbsp oil
  • 8 oz boneless pork chops, trimmed and thinly sliced
  • 1/4 small cabbage, shredded
  • 6 cups chicken stock
  • 8 None green onions, thinly sliced diagonally
  • 1/2 tsp grated green ginger
  • 1 1/2 tbsp soy sauce
  • 4 oz fine egg noodles

Instructions

  1. Heat oil in large saucepan on high heat. Stir-fry pork and cabbage for few minutes.
  2. Add stock, soy sauce and ginger. Bring slowly to a boil. Reduce heat to low; add 3/4 of the green onions and simmer for 10 mins. Season to taste.
  3. Meanwhile, cook noodles in boiling salted water 5-6 mins until tender; drain well.
  4. To serve, place a spoonful of noodles in soup bowls. Add the hot soup and sprinkle with remaining green onions.
