Ingredients

  • 3/4 cup sugar
  • 1 1/2 cups water
  • 1 cup raisins
  • 2 cups grated carrots
  • 1 tablespoon butter
  • 1 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup chopped nuts
  • 1 1/4 cups whole wheat flour
  • 1 1/8 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Mix sugar, water, raisins, grated carrots, butter, ground cloves, cinnamon, nutmeg, and chopped nuts together in a large bowl.
  2. Add the whole wheat flour, all-purpose flour, baking powder, baking soda, and salt to the mixture. Stir just to combine.
  3. Divide the batter evenly between 2 oiled loaf pans.
  4. Bake at 375°F (190°C) for 1 hour 10 minutes, or until a toothpick inserted into the center comes out clean.
