Ingredients

  • 1 1/2 lb. cooked chicken breasts, chopped
  • 1/4 (8 oz.) pkg. Neufchatel cheese, softened
  • 1 Tbsp. reduced calorie mayonnaise
  • 1 Tbsp. grated onion
  • 1 Tbsp. sweet pickle juice
  • 1/2 cup finely chopped celery
  • dash of curry powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 Tbsp. chopped pimento
  • dash of hot sauce
  • dash of garlic powder

Instructions

  1. Combine softened Neufchatel cheese and mayonnaise in a bowl, beating until smooth.
  2. Add grated onion, pickle juice, chopped celery, curry powder, salt, pepper, chopped pimento, hot sauce, and garlic powder; mix well.
  3. Stir in chopped cooked chicken and 2 tablespoons of chicken broth until evenly combined.
  4. Coat a 2-cup mold with nonstick cooking spray and pour the chicken mixture into the prepared mold.
  5. Chill the mold until the mixture is firm, then unmold onto a serving plate.
  6. Serve with Melba toast and raw vegetables.
