Instructions

  1. Combine 2 tablespoons sugar and lemon juice in a small bowl; stir and set aside.
  2. In a large bowl, combine all-purpose flour, baking powder, baking soda, and salt; mix well. Make a well in the center of the mixture.
  3. In a separate bowl, combine buttermilk, canola oil, thawed egg substitute, lemon rind, and vanilla.
  4. Add the wet ingredients to the dry ingredients; stir only until all ingredients are moistened.
  5. Gently fold in the thawed blueberries.
